Five for Friday

So this past week was extremely uneventful. I honestly cannot come up with a single thing to post (life wise) on today's Five for Friday. Favorite Pictures From 2014

I know it is already almost March (how is it almost March already?) and I don't know why I didn't think of posting something like this sooner, but I thought I would share some of my favorite pictures from the last year. I think this would be kind of a fun thing to post every year!
Hopefully 2015 will have a lot more picture taking opportunities!

Easy chicken and black bean enchiladas

Hello! Today I'm sharing my recipe for quick and easy chicken and black bean enchiladas. 
About a 1 lb package of chicken breasts
1 can of enchilada sauce
1 can of black beans
1 package of taco seasoning (3 tablespoons)
4 medium sized soft taco shells
Grated cheese

1. Preheat oven to 350° and lightly spray a 9x13in glass pan with cooking spray.

2. Pour 1/3 can of enchilada sauce in pan and tilt pan until sauce covers the bottom. 

3. Layer tortilla shells until bottom of pan is covered. (I used 2 medium sized ones.)

4. Drain black beans and set aside.

5. Trim any fat from chicken breasts and cook until done. 

6. Once chicken is cooked, place hot chicken into a Kitchenaid mixer and turn on medium-low speed to shred chicken. (You can also shred chicken by hand if you dont have a kitchenaid mixer, it just takes a little while longer.)

7. Once chicken is shreded, add black beans, 1/2 of the remaining enchilada sauce, and one package (3 tablespoons) of taco seasoning. Stir to combine. 

8. Pour chicken mixture on tortillas and spread around to cover pan. Top with two more tortilla shells. Then add the rest of the enchilada sauce and spread around. Top with cheese. You can add olives or green onions if you'd like. 

9. Bake for about 15 minutes or until cheese is completely melted.

10. Remove from oven and top with sour cream, more cheese, salsa, guacamole, or whatever else sounds good! Enjoy!

Five for Friday

Hello! Hope you had a great week! I am linking up with Coffee With Caitlin, Della Devoted, and Cup of Tea for another Five for Friday post! 

1. I finally decided on a phone case. I ordered this case as well as this tempered glass screen protector. The color looks much prettier in person!
2. Generally I think the sayings inside the Dove chocolates are pretty stupid, but I thought this one was pretty good ;)
3. I finished knitting another blanket. It took me quite a while to make; but I like how it turned out! It's actually four stripes, I just folded it to show the colors. 

4. You know how sometimes you cook something and it turns out way better than you thought it would? That happened with this black bean and corn guacamole I made. My sister and I have been eating it a lot! It's healthy and tastes so good!
5. This week I have really been focusing on getting some things on my to-do list done. It was nice to finally cross off a few things I had been putting off for a while. For instance, I had a ton of pictures I needed to save to disks. I had pictures from last summer up until now. Which for me means there was a LOT of pictures! I was glad to get that done and free up some space on my computer! So this weekend will probably be filled with finishing the rest of the things on my list!

Five for Friday

Bonjour! How are you?
I hope you all had a good week! I am linking up with Della Devoted, Coffee With Caitlin, and Cup of Tea for another edition of Five for Friday!

1. I got a new phone this week. It was a real pain trying to get it set up! I don't know what the guy at the store did, but I ended up having to come home, completely reset my phone to factory settings, and then download all the content from icloud again. Anyways, I am glad it is finally working! Which brings me to my second point...

2. Trying to pick a phone case! It is turning out to be more difficult than I thought. I have always had an Otterbox on my phone, but I was thinking of doing a regular case with tempered glass. I want something protective, but not too expensive. So for the time being, I am almost afraid to even use my phone! Do you have any suggestions on cases? I have the iPhone 5s.

3. There's a craft store near where my sister takes Tae Kwon Do that my mom has been talking about. She finally took me and I ended up with a lot of fun stuff! It's a little local place and it was really cheap!
4. I'm not sure what is going on with the weather app on my phone...but I'm pretty sure it's not 79 degrees anywhere right now!
5. My mom, sister and I painted these hearts for Valentine's day. We were going to write the sayings on them (like on the conversation hearts), but we can't seem to find our paint pens! Oh well, they still look fun!

Valentine's day card garland

Hello! Today I'm sharing another Valentine's day garland. (Check out the other one here

I had some playing cards lying around and I thought they would make a fun garland. I looked around on Pinterest for some ideas, but I couldn't find any garlands that I liked using playing cards.
All you need is:
-2 decks of cards (I had a couple decks already that were different sizes and different colors. Just use whatever you have!)
-red yarn (White would look nice as well.)
-red & white bakers twine (I got mine at Target, but this would be great as well.)
-a glue stick
-scotch tape
-a hole punch
Start off by taking a small piece of scotch tape and wrapping it around the end of the yarn. Then twist the very tip a bit so it forms a point.
Thread the end of the yarn through the doilies. 
 Using the hole punch, punch a hole about 3/4 of an inch from the top of the card.
 Cut the twine about 6 inches long. If you are using two full decks, you will need 18 pieces of string cut into 6 inch pieces. (I ended up being short one card.)
 Thread the bakers twine through the card then around the yarn and tie a bow. Then flip the card up and, using the glue stick, swipe some glue onto the doily and press the card back down.
I'm pretty pleased with how it turned out (if I do say so myself!). Hope you enjoy it too!
